Instructions
Step 1
Start the rice cooking. Purple rice is nice. So is Jasmin.
Step 2
Heat 2 tbsp oil and then mix in 40g of the Mae Ploy Thai green curry paste
Step 3
Heat the paste for a couple of minutes until its aroma is nice
Step 4
Add the coconut milk (I used 2 of the smaller cans of quality stuff - the percentage of coconut milk vs water varies a lot between brands)
Step 5
Stir and then add in the diced chicken. Simmer or 5 minutes.
Step 6
Add on all the veg and half the coriander, and cook for a further 10 minutes
Step 7
When it is ready stir in the sugar
Step 8
Serve, sprinkling the remaining corriander on top
