Step 1
Heat oil in a deep pan or a pressure cooker and fry the onions until golden.
Add the ginger paste and garlic paste and sauté until the smells change.
No add turmeric, black pepper powder, garam masala and salt to taste.
When the spices are incorporated, cooked well and smell pleasant, add chopped tomato, and saute well. Now add the diced chicken thighs, sauté it for five minutes, add salt to taste, mix, cover and cook for 10 minutes or 5-7 mins if using a pressure cooker. Meanwhile, blend the mint leaves, cilantro leaves, and Thai chili peppers to form a paste.
When the chicken is done, uncover it, add this paste to it and cook it for five minutes uncovered. Then add the lime juice, mix it and turn off the heat. You can check for taste and serve it with, hot basmati, rice, or chapatis
