This baked cod is the easiest main you'll ever make, and it comes together in less than a half hour! Serve with roasted russet or sweet potatoes and lots of green vegetables, and you've got a healthy, easy dinner for any night of the week.

Instructions

Step 1
Heat oven to 425°F.
Step 2
2 To prepare the cod fillets, cut them into 4oz. rectangular portions. Pat dry, and set aside.
Step 3
3 Coat a baking pan with 2 tablespoons of Colavita Olive Oil. Place the Cod fillets in the pan.
Step 4
4 Sprinkle the bread crumbs over the tops of the cod fillets, covering them.
Step 5
5 Drizzle a tablespoon of olive oil on top of each fillet.
Step 6
6 Place sliced lemons (about three slices) on top of each fillet.
Step 7
7 Bake for 20 minutes.
