Ingredients

6 cupschicken broth
1.25 lbschicken breasts
2leeks
white and light green only, halved and thinly sliced
2carrots
sliced 1/2in thick
2celery stalks
sliced 1/2in thick
4garlic cloves
½ tspred pepper flakes
½ tsponion powder
salt
to taste
pepper
to taste
3 Tbsplemon juice
1 cupasparagus
sliced 1/2 in thick
1 cupfresh peas
or frozen
9 ouncestortellini
refrigerated
½ cupfresh herbs
chopped, dill, mint, tarragon, parsley, chives, or mixture
Instructions
Step 1
In 6-8 qt slow cooker, combine stock, chicken, leeks, carrots, celery, garlic, red pepper flakes, onion powder, and several grinds of pepper. Add 1/2 tsp salt if salted stock, 1 tap if low sodium stock, 2 tsp if unsalted stock. Cover and cook on low for until chicken and vegetables and very tender, about 7 hours.
Step 2
Increase heat to high. Using two forks, shred the chicken. Add lemon juice, asparagus, peas, and tortellini, if using. Cover and cook until the vegetables are tender to crisp tender and the tortellini is cooked through, 6-7 minutes. Stir in the herbs; season to taste with salt and pepper. Divide and serve.
