Instructions
Step 1
Melt the butter and allow to cool. Roughly chop all the chocolate while the butter cools.
Step 2
Mix the flour, salt, cornflour and baking soda in a bowl and put to one side. To make chocolate cookies, substitute 60g of flour for 60g cocoa flour.
Step 3
Mix the sugar in a stand mixer bowl.
Step 4
Slowly stream in the melted butter until fully combined.
Step 5
Add the eggs one at a time followed by the egg yolks one a time until mixed.
Step 6
Using the paddle attachment, slowly add the flour mixture and mix until a dough forms.
Step 7
Mix in the chopped chocolate.
Step 8
Cover tightly with cling film so it is touching the dough and chill in the fridge for at least 2 hours and up to 24 hours.
Step 9
Divide into roughly 100g balls and place on lined baking trays.
Step 10
Cover the trays with cling film and chill in the fridge again for 1 hour.
Step 11
Bake at 200C for 10 - 13 minutes.
