Instructions
Step 1
Cook pasta according to package directions. Drain all but ½ cup of water and reserve for later.
Step 2
Cook sausage and onion in a large skillet over medium high heat until sausage begins to brown. Drain excess fat.
Step 3
Add garlic and mushrooms and continue to cook until mushrooms are tender and sausage is cooked through.
Step 4
Increase heat to high, add wine and let simmer down until almost evaporated.
Step 5
Reduce heat to medium high, and add tomatoes and cream. Let cook for a few minutes and come to a low simmer. Then stir in parmesan.
Step 6
Once parmesan has melted, add spinach and stir until wilted.
Step 7
Plate pasta and top with sauce.
