Step 1
In a skillet over medium heat cook the onions with 1cup of olive oil. Add 1 tbs sumac and cook about 15 minutes stirring frequently until they become soft and translucent. Cut the heat and set aside. Butterfly your chicken breast by slicing in 1/2 lengthwise without cutting all the way through. Season your chicken with 1 tbs sumac, salt, pepper, cumin, 7 spice, garlic powder, and 1 tbs olive oil Coat well then place in a 13 x 9 baking dish sprayed with nonstick spray. Stuff with your onion mixture then close and top with remaining tablespoon of olive oil. Bake at 350° for 45 minutes. Serve with naan or pita bread top with some parsley and toasted pinenuts and enjoy!
