Cream cheese and brocoli soup

Instructions

Step 1
First trim the brocoli into tiny florets (about 5 mm) then chop the stalky parts quite small as well.
Step 2
In a large saucepan, melt the butter.
Step 3
Add roughly chopped leeks, onion and the brocoli stalks (not florets). Stir well and cover the pan, leaving the veggies to sweat for 10 minutes.
Step 4
Next stir in the oatmeal, then add the milk, little at a time. When all the milk is in, add the stock and some seasoning. Simmer gently for another 10 minutes.
Step 5
Turn off the heat and allow the soup to cool a little. While waiting, steam the brocoli florets for exactly 4 minutes.
Step 6
Now pour the soup into a food processor (or use a stick blender) along with the cream cheese.
Step 7
Blend until smooth then return to the pan. Check the seasoning and serve.
