Ingredients

350gbroccoli
separate and breakdown florets till small and evenly sized, and then thinly slice the stalk

100gwhite onion
diced

5garlic cloves
crushed

3celery stalks
finely sliced

10gfresh thyme
chopped

215gstilton cheese
crumbled

300gwhite potatoes
peeled & finely sliced

4 Tbsprapeseed oil

2lfresh chicken stock

250mlsweet white wine

100gspinach
optional for colour
Instructions
Step 1
Sauté the onions till softening



Step 2
Add the celery and broccoli stalks and sauté till softening and the onion is translucent
Step 3
Add the garlic and sauté till fragrant

Step 4
Add the thyme and sauté for 10 seconds
Step 5
Deglaze with white wine and reduce until entirely evaporated

Step 6
Add the chicken stock and double cream and bring to a simmer until the broccoli stalks are soft enough to pierce easily with a sharp knife
Step 7
Add the broccoli florets and simmer for 5 minutes or until cooked through but still a vibrant green
Step 8
Blend immediately, adding Stilton cheese as you go till the fragrance of the cheese is pronounced enough for your taste, blend in spinach if required until the colour is bright enough for you.

Step 9
Pass through a fine mesh sieve, taking care to force as much vegetable matter as possible through to maintain the texture. The soup after passing will be slightly thinner than previously, so if your soup feels thick after blending don’t let it down until you’ve finished.
