Instructions
Step 1
Boil or steam the corn cobs in a pan, steamer or pressure cooker. Drain and let the corn cobs cool.
Step 2
Scrape the corn kernels from the cobs.
Step 3
Blend the corn kernels with some water in a blender till smooth. (Keep aside a few corn kernels).
Step 4
Chop the onions finely, and sauté them in a pot with a little vegetable oil, and leave them until they turn translucent.
Step 5
Add the corn paste to the onion and stir well, then add the vegetable stock and stir again.
Step 6
Let the soup come to a boil then add the freshly ground pepper, salt & the remaining corn kernels.
Step 7
Simmer for a minute then add the corn flour paste and simmer for 5 minutes till the soup thickens and corn flour cooked.
Step 8
Check the seasonings. Pour the corn soup in a serving soup bowls and Serve hot.
Step 9
Garnished with chopped parsley, chives or spring onion greens.
