Lamb Donner with Chilli Sauce and Chips

Instructions
Step 1
Preheat oven to 220° (200° fan)
Step 2
Cut potatoes (skin on) into thin chips
Step 3
Add potatoes to a bowl with a drizzle of oil, 1 tbsp of oregano and a pinch of salt and pepper to taste
Step 4
Add potatoes to a lined baking tray and put in oven for 20-25 mins
Step 5
While potatoes are cooking, peel and dice the garlic. Halve the onion, slicing one half and finely dicing the other half.
Step 6
Add the lamb mince to a bowl, along with the breadcrumbs, cumin, remaining organo, the diced onion, half of the chopped garlic and a pinch of salt and pepper.

Mix lamb mixture until combined well
Step 8
Get two pieces of baking paper at approx an A4 size. Place the lamb mixture between the two pieces of baking paper and use a rolling pin to flatten out to about the thickness of a pound coin.
Step 9
Remove the top layer of the baking paper and transfer to a baking sheet.
Step 10
Add tray to the oven and bake for 20 minutes or until cooked through
Step 11
While lamb and chips are cooking, wash your lettuce and tomatoes
Step 12
Finely slice the lettuce and dice the tomato into small wedges.
Step 13
In a small bowl, combine your remaining garlic with the mayonnaise and a little oil. Give a good mix.
Step 14
In a seperate small bowl, combine the ketchup and chilli flakes. Taste and if it is too tart, sweeten with a squeeze of honey.
Step 15
Once the chips and lamb are almost done (5ish mins remaining) add your pita to the oven to warm.
Step 16
Once the lamb is cooked, slice into long strips.
Step 17
Serve the warm pita stuffed with the lamb and salad to your liking. Top with spicy ketchup and garlic mayo.
