Step 1
Place pepitos and almonds in food processor and grind until fine. Remove and set aside. Place dates, oats, Chia seeds, cinnamon and nutmeg in food processor. Grind together. After date mixture is ground together, add pumpkin and vanilla. Remove and place in large bowl. Mix in nut mixture and mix well with hands. Roll into small balls and freeze on sheet tray on parchment paper. Once frozen, remove from sheet and place in large Ziploc bag. Store in freezer.
