Instructions
Step 1
Place all of the salad ingredients into a bowl (except the dressing, hummus and sambal), mix well.
For the dressing
Step 2
Place all ingredients into a jar with a lid and shake well to combine well. Place into the fridge until required.
For the hummus
Step 3
Place all ingredients into a high powered blender. Blend to a smooth paste. The hummus should be the consistency of a thick smooth sauce.
To serve
Step 4
Divide the salad into two coconut bowls. Top with the dressing, hummus and sambal and a few salad leaves.
