Instructions

Step 1
Break the egg into a medium bowl and beat with a fork. Add the mashed banana and cinnamon and stir to combine. The batter will seem very runny.
Step 2
Melt the butter on a large griddle or in a large, preferably nonstick, skillet. Drop the banana batter by tablespoonfuls onto the pan and cook until golden brown and cooked through, about 3 minutes on the first side and 1 to 2 minutes on the second. Cool and serve.
