Instructions

Step 1
Peel and grate ginger. Zest lime(optional)
Step 2
Warm oil over medium heat in a medium pot.
Step 3
When warm add rice, salt and ginger. Cook, stirring often for 2-3 mins, until fragrant.
Step 4
Add coconut milk, and water and bring to a boil over high heat.
Step 5
Once boiling, reduce heat to low and cover. Cook for 12-14 mins until rice is tender and liquid is absorbed.
Step 6
Stir in lime zest, and fluff rice with fork.
