Your classic stuffed bell peppers with a kick. This is my family’s favorite stuffed bell pepper recipe!
For a less spicy palette, don’t add green chili.

Step 1
Boil halved bell peppers until slightly soft, should be able to maintain shape without laying flat. About 30 minutes.
Drain.
Pre heat oven 375.
In a large skillet, cook ground sausage.
Add frozen green chili, cook until fully thawed and combined.
Drain, leave in strainer during next step.
In same skillet, slowly melt cream cheese and mix in soup.
Continue to simmer, stirring constantly until fully combined.
Add sausage mix, stir until fully combine.
Lay bell peppers in a casserole dish.
Stuff with sausage mixture.
Sprinkle cheeses on top.
Bake for 25-30 minutes or until cheese is cooked to your preference.
Remove from oven, allow to cool for 5 minutes.
Best eaten when warm.
Top with sour cream optional.
