Instructions
Step 1
Half the avocado and scoop out the insides with a spoon, placing it all into a bowl (bar the seed).
Step 2
Smash the avocado with a fork along with a couple grinds of salt and pepper, 1tsp of cayenne pepper 1/2 tsp of paprika, and the juice of half a lime (I like mine spicy, adjust for personal taste).
Step 3
Toast the bread and fry the egg to your personal taste. I like a runny yolk along with lightly toasted bread but it’s all up to you.
Step 4
Spread the smashed avocado mix over the two slices of toast and place the eggs on top of them. Enjoy!
