Smashed Peas on Toast

Forget about avocados, this is our new favourite way to enjoy a classy bit of toast in the morning. It's healthy, fresh and vibrant, but most importantly, it'll look just as good on Instagram!

Instructions

Step 1
Transfer the peas to a small bowl and cover them with hot water from the kettle. Set to one side for 10 minutes.
Step 2
Peel the garlic and add the clove to a food processor along with the juice from the lemon, mint, a generous pinch of salt and pepper and half a tablespoon of extra virgin olive oil.
Step 3
Drain the peas and transfer them to the food processor, then pulse until the mixture reaches a smooth consistency.
Step 4
You might need to scrape down the sides of the provessor as you go to make sure the mixture pulses evenly.
