Instructions
Step 1
Trim asparagus and chop into 1/2 inch pieces.
Step 2
Heat butter in medium saucepan.
Step 3
Add onion, carrot, garlic and cook over medium heat 5 to 7 minutes.
Step 4
Add flour and cook, stirring, for 2 minutes. (Do not brown.)
Step 5
Remove from heat and whisk in stock and milk.
Step 6
Return to medium heat and cook, stirring until mixture barely comes to a boil.
Step 7
Add chopped asparagus and cook over medium heat until tender, 15 to 20 minutes.
Step 8
Puree mixture in immersion blender or food processor until smooth.
Step 9
Return to heat. Season with salt, white pepper and nutmeg.
