Instructions
Step 1
In a large pot, thoroughly brown beef, and garlic over medium heat. Drain excess fat and set aside.
Step 2
Heat oil in a skillet over medium high heat. Add onions, celery, and seasonings and sauté for 5 to 7 minutes. When onions are golden and veggies are halfway cooked add zucchini and cook for two more minutes stirring frequently.
Step 3
Add skillet ingredients into the pot and stir well. Also add tomatoes and bring everything to a boil, stirring frequently. Reduce heat and simmer for 20 minutes.
Step 4
Makes eight servings. One serving equals approximately one cup
