Instructions
Step 1
Blanch broccolini (2 min.) in med. pot of boiling, salted water. Drain immediately & cool under cold, running water. Gently squeeze & pat dry; chop.
Step 2
In med. skillet, heat olive oil. Add sausage; cook one side over med.-high (2 min.). Flip sausages over; add garlic & red pepper flakes Cook other side of sausages (2 min.), stirring occasionally so garlic doesn't burn.
Step 3
Add broccolini to skillet & cook (3 min.), stirring until tender.
Step 4
Remove skillet from the heat, stir/squeeze in lemon juice & Parmesan cheese. Season with salt, to taste.

SAUSAGE SHORTCUT: Since most packages of smoked sausage contain around 14 oz., freeze smoked sausage in smaller portions for use in other recipes.
