Instructions

Step 1
Preheat oven to 350. Mix the first six ingredients in a large oven safe pan. I use a large turkey roaster. Roast nut mix till the coconut begins to appear toasted. Stir every 10 or 15 minutes. Usually, roasting takes 30 to 40 minutes. When close to done add the dried fruit and stir well so it is all warm. Mix butter, honey, and syrup in a small saucepan and bring to rolling boil. Boil about 1 ½ minutes. Add vanilla. Pour over nut mix and stir till all pieces are coated. Return to oven and bake 8 to 10 minutes more, stirring once or twice. When you feel it getting stickier when stirring, it is done. If in doubt do not overcook, the coconut will burn and its edible but not as tasty. When completely cool place in covered containers and enjoy! I think it would freeze well too.
Step 2
This recipe is forgiving. Add or leave out any type of nut or fruit you wish. Just keep the number of cups equal. For example, instead of two cups of pecans you may want to add 1 cup pecans, and 1 cup walnuts. Maybe you want to add dried pineapple or raisins instead of cranberries. If you prefer some oatmeal in your granola you could replace some of the nuts with it. Since oatmeal is dry the number of cups may need to be cut down. I have not don it so I can’t say but you could experiment. As long as not overcooked, even a “failed” batch would be could.
Step 3
I have also used sweetened shredded coconut and it works just be careful as it browns sooner than unsweetened and since it is smaller also burns quicker. *Without corn syrup this recipe would be Paleo. I add it because I think it improves the texture of the honey sauce. I have made it without and it was very good too.
