Step 1
In a small bowl, combine the warm milk (around 37°C), 1 tsp of sugar, and the dry yeast. Stir gently and let sit for 5-10 minutes until the mixture becomes foamy and bubbly, indicating the yeast is activated.
Step 2
In a large mixing bowl, combine the all-purpose flour and 30g of sugar. Add the activated yeast mixture, the egg, and the softened butter. Mix everything together until a dough forms. Knead the dough on a floured surface for about 8-10 minutes, until it becomes smooth and elastic.
Step 3
Place the dough in a lightly greased bowl, cover it with a kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Step 4
While the dough is rising, prepare the filling. In a small bowl, mix the softened butter, brown sugar, and ground cinnamon until smooth and well combined.
Step 5
Once the dough has risen, punch it down to release the air. Roll it out on a lightly floured surface into a rectangle, about 30x40 cm. Spread the cinnamon filling evenly over the surface of the dough.

Fold the dough in half lengthwise, then slice it into 10-12 strips. Take each strip, twist it several times, and then coil it into a bun shape. Place the twisted buns on a baking tray lined with parchment paper.
Step 7
Cover the buns with a towel and let them rise for another 20-30 minutes.

Preheat the oven to 180°C (350°F). Bake the cinnamon buns for 15-20 minutes, or until golden brown.
Step 9
Let the buns cool slightly before serving. Enjoy them warm, without the need for glaze!
