White blend: Chickpea Zucchini base blend

From Missy Chase Lapine's "Sneaky Blends" cookbook. This will be helpful for other recipes from her book, which will be added to this Sneaky Veggie community. "Beans are amazing for you; some 'blue zones' with the greatest longevity eat them as a dietary staple, but they can be calorically-dense. So here I've added a mild-tasting vegetable that's super-low in calories to balance things out. If you prefer to use dried beans, soak them overnight and cook as directed."

Instructions

Step 1
Puree the beans and zucchini along with 3 to 4 tablespoons of filtered water until smooth, adding more water as necessary.
