I’ve got a new found love with skewering vegetables and also a new found love for Aubergine. It’s such a versatile texture and flavour that you can do so much with!
These were soft sticky and sweet with the saltiness from the miso! So dam good! 😍

Instructions
Step 1
1. Start by chopping your Aubergine in half and then into half moon shapes.
Step 2
2. Drizzle them in oil and salt and wack them in the oven at 180C for 20 mins.
Step 3
3. Mix together your marinade ingredients and prep your salad.
Step 4
3. Once the 20 mins is up brush over 3/4 of your marinade onto the Aubergine, making sure to cover it all then wack it back in the oven for another 10 mins.
Step 5
4. Serve with sesame seeds on a bed of salad and ENOOY!
