Step 1
Preheat the oven to 375°F. Heat the olive oil in a skillet over a medium/high heat. Add chicken to pan and cooked until done. Once cooked, scatter the chicken in an8x8” baking dish. Melt butter in a small sauce pan over medium heat. Add onions and sliced mushrooms to the pan and cook 4-5 minutes until onion is translucent. Add minced garlic and cook for 1-2 minutes more. Add the cream cheese and stir until melted. Add the cream, Italian seasonings , salt; stir to combine. Bring sauce to a simmer and cook for 5-7 minutes, until thickened and reduced. Pour the sauce over the chicken and stir to combine. Sprinkle Parmesan cheese on top and bake in oven preheated 350°F for 20-25 minutes until hot, bubbling and lightly browned.
