Instructions
Step 1
Put the cream, cheese, passoa and sugar in a large bowl and whisk until fairly thick (it holds its peaks)
Step 2
Put the ginger wine into a bowl. Take a sponge finger one at a time and dip in. Don't hold it too long (2-3s each side). Line your bowl with a layer of soaked sponge fingers
Step 3
Add half of the cream mixture on top and smooth out
Step 4
Repeat the previous two steps so that all the fingers and cream mixture is used up
Step 5
Scoop out the passion fruit seeds and decorate the surface. Cover and chill.
