Meat Sauce
2 lbItalian Sausage
I use both sweet with fennel and spicy Italian or part sausage and ground beef
2 clovegarlic
minced, or more according to taste
2 Tbspwhole basil
1 ½ tspsalt
I usually cut back
2 lbcan tomatoes
diced
2 x 12 oztomato paste
cans
Ricotta Cheese Mixture
Instructions
Lasagna Noodles
Step 1
(Note, I doubled this recipe above for a 9x13 pan as I like to have enough sauce)
Step 2
Brown meat slowly; spoon off excess fat. Add next 5 ingredients. Simmer uncovered for 30 minutes, stirring occasionally. Cook noodles and then drain and rinse and drain again
Ricotta Cheese Mixture
Step 3
Beat eggs; add remaining ingredients; except mozzarella
Step 4
Layer half of the noodles in pan, spread half of the ricotta cheese mixtures, add half of the mozzarella cheese and half of the meat sauce.
Step 5
Repeat layers.
Step 6
Bake at 375 degrees about 30 minutes (or assemble early and refrigerate; bake 45 minutes). Let stand for 10 minutes before serving.
