Creamy Vodka Sauce Pasta w/ Chickpeas and Broccoli
This sauce is so creamy and versatile and I personally love it paired for chickpeas and broccoli. You can omit those if you'd prefer and simply use sauce on pasta, chicken or ravioli!

Instructions
Step 1
Soak cashews in a bowl with boiling water for 15 min. Drain and add to blender.
Step 2
Steam broccoli and set aside.
Step 3
Mince the garlic, chop the onion, and add to a sauté pan with the olive oil.
Step 4
Sauté until lightly golden brown, about 5 minutes over medium heat.
Step 5
Reduce heat to low, pour in the vodka and can of tomatoes and simmer for 10 minutes so the flavors can absorb and vodka cooks off. Season with salt, pepper and Italian seasoning.
Step 6
Transfer mixture to a blender and add in the drained and rinsed cashews and coconut milk and blend!
Step 7
Cook desired pasta and drain.
Step 8
Pour sauce mixture over hot pasta, add in chickpeas and steamed broccoli and enjoy!
