Step 1
Wash kale and rip off its leaves into bite sized pieces.
Step 2
in a bowl combine kale with 1/2 tsp salt. and massage hard for about 5-10 minutes. This will make the leaves super tender and the volume will shrink by about half.
Step 3
In another bowl combine oil, balsamic, salt and pepper and mix. Add the kale into the bowl and mix again.
Step 4
slice up the shallot into thin strips. Cut up the avocado into cubes and add it to the bowl with the residual dressing so there is no waste.
Step 5
top with sunflower seeds and enjoy!
