Instructions

Step 1
Preheat the oven to 400 degrees. Lime a baking sheet with foil or parchment paper and spray with nonstick spray. Combine the meat, eggs, breadcrumbs, cheese, salt, garlic, onion, salt, pepper, and parsley (if using) to a bowl. Stir until just combined, do not over mix. Add a tbsp or two of water as needed to keep mixture moist.
Step 2
Form the meat into 1 1/2" balls then place on the baking sheet.
Step 3
Bake uncovered for 17-20 minutes, or until no longer pink in the middle. Turn the meatballs halfway through so they don't brown on the bottom.
Step 4
Enjoy as is after letting them cool, or simmer in marinara sauce for 10 minutes to be put in a sub or over spaghetti
