1 tspkosher salt
less if using regular

2 TblsBaking soda

4eggs
large, room temperature

1 cupoil
Don’t use EVOO, you can use light olive oil for baked goods very nicely

1 qtbuttermilk

2 Tblsvanilla

Cinnamon

pumpkin pie spice

apple pie spice

nutmeg
Instructions
Step 1
Combine all liquid ingredients and spices: Beat eggs a little, add milk and rest.
Step 2
In another large bowl mix the dry ingredients, noting**, even using your hands to mix all together well.. Add plumped raisins to this mixture to coat the raisins with flour. Then add liquid to dry ingredients and you almost have to use a large rubber spatula to mix.
Step 3
Grease muffin tins with butter or spray. Fill ¼ cup for each tin for large size muffins, and bake 400 degrees for 20 minutes. Fill mini muffin tins generously and bake 400 degrees for 15 minutes.
