Instructions

Step 1
Preheat oven to 375°. Combine dry ingredients with whisk. Mix wet ingredients separately with mixer until well blended. Combine wet and dry ingredients. Prepare muffin tins with a light spray of avocado oil. Scoop mixture into muffin tins and bake for 18 to 20 minutes (until toothpick comes out clean).

I have made this recipe with and without a 1/2 c of coconut milk. Healthier without but more moist with it added in. Also can do add-ins like raisins, dried cranberries, or chocolate chips to make it sweeter.
