Instructions
Step 1
Line a 12-count muffin tin with cupcake liners and preheat oven to 400 ̊F.
Step 2
In a small mixing bowl, combine Flourish Buttermilk Protein Pancake Mix, oats, cinnamon, baking soda, and set aside.
Step 3
In a large mixing bowl, using an electric mixer, beat eggs whites with honey on high speed for 3 minutes, or until thick and light in colour.
Step 4
Add greek yogurt and mashed banana. Set mixer to low speed and mix just until combined.
Step 5
Combine the dry and wet ingredients using a hand held whisk, add 1/2 of the dry mixture into the batter, stirring to incorporate with each addition. Do not overmix or muffins will be dense.
Step 6
Use a spatula to fold in 1 cup of mixed berries, folding just until combined.
Step 7
Divide batter into prepared muffin tin, filling to the top or until all of the batter is used up. Bake in the center of the oven at 400 ̊F for 18-24 minutes or until tops are golden and a toothpick inserted into the center come out clean.
Step 8
Transfer muffins to a wire rack to cool. Serve warm or at room temperature.
