Ham & potato casserole

This recipe emerged as I researched a way to use leftover ham. I knew I had potatoes, cheese, and other ingredients to use. I researched and combined recipes and came up with this delicious, easy, creamy recipe! Try it!

Instructions

Step 1
Cut up and boil potatoes. In skillet sauté onions and peppers in 2 Tbsp butter. In mixing bowl combine cooked potatoes, chopped up ham, sautéed onions/peppers, sour cream, 3/4 cup shredded cheese, cream of chicken soup. In separate bowl, crushed Ritz crackers and mix with 1/4 cup shredded cheese and 6 Tbsp butter. In square casserole dish, spoon in the potato/ham mixture and top with cracker topping. Bake on 350 for 20 minutes or until bubbly.
