Ingredients

2 tablespoonsless sodium soy sauce
1 tablespoonfresh lime juice
1 tablespoontamarind paste
1 ½ tablespoonscane sugar
or white sugar
½ teaspoongarlic
minced
1 cupchicken
cooked and shredded
2 ouncesrice noodles
cooked and chilled
2flour tortillas
large
2 leavesleafy lettuce
⅓ cupbean sprouts
¼ cupmatchstick carrots
1 small handfulfresh cilantro
2 tablespoonsroasted peanuts
Instructions
Step 1
Combine ingredients for Pad Thai sauce in a small bowl and stir well. Add chicken and noodles and gently stir to coat. Set aside for 5 minutes to allow noodles to absorb the sauce. Place one tortilla on a clean work surface. Add 1 lettuce leaf towards the lower half of the tortilla and top with ½ of the chicken/rice noodle mixture. Add ½ of the bean sprouts, carrots, cilantro and peanuts. Fold the bottom up and fold in the sides. Roll the tortilla away from you snugly. Repeat with remaining tortilla. Slice wraps in half and enjoy.
