Instructions
Step 1
Heat oil and cook bacon. Remove from pan
Step 2
Add chicken and cook until browned. Remove from pan
Step 3
Turn heat down to low, add butter until melted. Add garlic and onion and sauté for 3 minutes
Step 4
Add rice and stir until grains are translucent (heat should be high now)
Step 5
Add wine and cook until alcohol smell is gone
Step 6
Turn heat down to medium low and add 3 cups of chicken stock. Leave uncovered and stir only once or twice until most of the liquid has been absorbed
Step 7
Check firmness off rice and add 1/2 cup of stock at a time until rice is cooked to liking
Step 8
Add chicken and bacon back to risotto to heat through
Step 9
Add butter and Parmesan and stir vigorously to melt
Step 10
Serve immediately
