Shrimp and Kielbasa veggie stew

Our homemade version of a shrimp, kielbasa and veggie stew.

Instructions

Step 1
melt the butter and add onions, spices, red pepper, zucchini and mushrooms. Saute until all are tender and onions begin to look clear.
Step 2
Add diced kielbasa, mix and heat until kielbasa is warm all the way through (if using precooked). If using uncooked kielbasa, heat in a pan first with water just enough to cover it. Cook until internal temperature is above 165F (or as indicated on the package).
Step 3
Add canned tomatoes, including the water. Mix well and heat until a high simmer is reached.
Step 4
Add shrimp and cook until they change to pink color (if using uncooked).
Step 5
Reduce heat to low, add spinach and stir until it wilts.
Step 6
Salt and pepper to taste.
Step 7
Serve over rice or with naan, or eat plain as a thick stew.
