Brown Butter S’mores Cookies

Instructions

Step 1
Melt 2 sticks of butter over medium heat for about 6-8 minutes until you start to see little brown bits on the bottom of the pan. Remove from heat and pour into a heat-safe bowl and let cool for 15 minutes.
Step 2
Mix together 3/4 cup light brown sugar, 1/4 sugar, and butter by hand or with electric mixer.
Step 3
Add in 2 eggs and 1 tbsp vanilla and mix together.
Step 4
In a separate bowl mix 2 1/4 cup flour, 1/2 teaspoon salt, and 1 tsp baking soda. Then add to wet ingredients and combine until incorporated.
Step 5
Mix in 1 1/2 cups crushed Graham crackers, 1 cup semi-sweet chocolate chips, 1 cup chopped Hershey’s chocolate bar, and 1 1/2 cups mini marshmallow.
Step 6
Roll your dough into balls, about the size of an ice cream scoop. To make the cookies extra gooey, stuff each one with three mini marshmallows. Place the cookies onto a lined cookie sheet, 12 cookies per sheet. Refrigerate for at least 2 hours, up to 24 hours.
Step 7
Bake your cookies at 350 degrees for 8 minutes. Then take your cookies out of the oven and place a little piece of chocolate, Graham cracker, and a mini marshmallow on the top of each one. Then bake for 2 more minutes.
Step 8
Take out of the oven, and after they have started to cool and firm up place on cooling rack.
