These beef sandwiches use stew beef (or whatever cheap cut you have) with onions, mushrooms and peppers in the instant pot to make an easy but special sandwich.

Step 1
Sauté vegetables, beef and garlic in instant pot until softened and juices release. Mix remaining ingredients and add to instant pot. Pressure cook on high for 6 minutes and allow natural release for 10 minutes then vent. Strain the meat and vegetables (reserve liquid for dipping, optionally) Top hoagies or other sandwich rolls with aïoli*, the meat and vegetables, cheese, and pickles . *I added garlic powder, onion powder, smoked paprika, parsley and mustangs powder to my mayonnaise to make a quick aïoli type dressing.
