Instructions
Step 1
Put uncooked rice and 2 cups boiling water in microwave safe bowl. Microwave on high for 12mins, no lid. Remove, cover with lid, rest for 10mins.
Step 2
Heat oil in frying pan and add diced chicken. Season to taste and cook through. Set aside
Step 3
Heat butter in pan, add onion and garlic, cook 1 minute. Add remaining ingredients, bring to boil, reduce heat.
Step 4
Add cooked chicken. Simmer sauce, uncovered for 5 minutes or until thick
Step 5
Serve with rice
