“This is my favorite lukshen (noodle) kugel recipe. It is different from most as it is almost custardy!! This recipe is my own creation based on a recipe from The Rochester, NY Hadassah Cookbook.” ~ Softa123 aka Marilyn Sultar
NOTE: A lukshen kugel is the Yiddish name for a noodle pudding. I think of it as the Jewish lasagna. It is sweet but not overly sweet. It is usually served hot. It can be used as a side dish (using this recipe, it would go with a dairy meal if you keep kosher) or a dessert. I am of the firm opinion that it is a side dish. That way I can have both the kugel and dessert! ~ Marilyn Sultar

KUGEL:

1 poundNoodles
Broad, cooked & drained

2eggs
beaten

1 teaspoonvanilla

¼ cupsugar

0.25 poundButter
OR Margarine

1 teaspooncinnamon

2Apples
washed, peeled, cored & sliced

½ cupRaisins
I actually don’t measure my raisins, I just throw in3-4 handfuls I prefer golden raisins, but either will do Softa123 aka Marilyn Sultar
TOPPING:
Instructions
Step 1
Mix cooked noodles, 2 eggs, vanilla, sugar, butter, cinnamon, apples and raisins together. Pour into UNGREASED 8×16″ glass pan (A 13×9″ pan will do and I often make this recipe in the disposable aluminum pans).
Step 2
Mix cottage cheese, sour cream, lemon juice, milk and 2 beaten eggs together in blender. Process until well blended. Pour this mixture ontop of noodle mixture. DO NOT MIX!
Step 3
Bake at 350 degrees for 1 HOUR.
