Step 1
Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. Halve, peel, and finely dice half the onion (whole onion for 4 servings). Drain and rinse corn. Trim and quarter zucchini lengthwise; thinly slice crosswise. Quarter lime.
Step 2
Heat a drizzle of oil in a large pan over medium-high heat. Add diced onion; cook, stirring, until softened, 4-5 minutes. Add another drizzle of oil, corn, zucchini, Blackening Spice, and a big pinch of salt and pepper. Cook, stirring occasionally, until charred, 4-5 minutes (cover pan if corn begins to pop!). Stir in ¼ cup water (⅓ cup for 4 servings) and cook until water has absorbed, 5 minutes more.
Step 3
Stir 1 TBSP butter (2 TBSP for 4 servings) into pan with veggie mixture until melted. Add 1 TBSP flour (2 TBSP for 4) and cook, stirring often, until combined and slightly thickened, 1 minute. Slowly pour in ¼ cup water (½ cup for 4), stirring as you go, then remove from heat. Stir in cheese until combined. Season with salt and pepper. Add a squeeze of lime juice to taste.
Step 4
Meanwhile, line a baking sheet with foil and lightly oil. Place tortillas on a clean work surface and drizzle with oil; brush or rub to coat all over. Once filling is done, evenly divide between one side of each tortilla (we used a heaping ¼ cup for each tortilla). Roll up tortillas, starting with filled sides, to create flautas. Place, seam sides down, on prepared sheet. (Make sure the flautas are snug on the sheet—this will prevent them from unrolling!) Bake on middle rack until golden brown and crispy, 8-12 minutes.
Step 5
While flautas bake, in a medium bowl, combine coleslaw mix, mayonnaise, juice from one lime wedge (two wedges for 4 servings), and ¼ tsp sugar (½ tsp for 4). Season with a pinch of salt and pepper; toss to coat
Step 6
Divide flautas between plates. Top with slaw. Serve any remaining lime wedges on the side. (Have extra filling? Serve it on the side!)
