MEXICAN MEALS FOR WEIGHT LOSS: TACOS DE POLLO EN RAJAS 🇲🇽 Rajas con crema was a meal I thought was reserved for “cheat meals” but with this recipe I can eat it everyday. My rajas recipe packs over 40 grams of protein! You can serve with a side of choice or make them into tacos like I did. This recipe also works with shrimp!

Instructions

Step 1
1. Wash and dry 2 poblano peppers. Roast using your preferred method. I air fry at 400* F for 12 minutes.
Step 2
2. Place in a bag (or leave in air fryer) for 10-15 minutes before peeling and removing the seeds. While waiting continue with step 2 & 3.

3. Slice the 2 poblano peppers and onion. Drain can of corn. Put vegetables to the side.

4. In a bowl mix Greek yogurt, light mayonnaise, jalapeño mustard, and almond milk.
Step 5
5. Spray oil to a pan and add onion. Cook for 1-2 minutes.
Step 6
6. Cook chicken for 4-5 minutes. Season with salt, garlic powder, & pepper.
Step 7
7. Add corn and cook for additional 4 minutes.
Step 8
8. Add sliced poblano peppers. Mix well, bring heat down to lowest setting, & cook for additional 5 minutes.
Step 9
9. Add in the crema. Cook for 5 minutes.
Step 10
10. Add in cheese, turn off the heat, and mix well.
Step 11
11. Divide into 4 servings. Each serving is 1 cup of chicken mixture. You can serve with white rice, vegetables, or make tacos (in video).
Step 12
12. 1 SERVING TACOS: divide the 1 cup of mixture between 4 low calorie tortillas.
Step 13
13. Crisp up on the comal with avocado oil spray.
