Turkey soup

This soup is made with turkey drumsticks. However, since we don’t want for nutritional value to be spiked by skin (and bones? not sure), I’m putting there just “turkey meat”. But you should use the drumsticks as it makes much better broth.

Instructions

Step 1
Prepare turkey drumsticks for the broth: Remove the skin and rinse. Boil in just water for 5 min to remove the factory washable a from the meat (al that yucky foam you see). Drain them, rinse the drumsticks and wash the pot. Now, your drumsticks are ready for the broth.
Step 2
In the large pot, add all the ingredients of the broth and boil on med-low heat for 1-1.5h with a closed lid. Check so it’s not boiling too hard, adjust the heat to make sure it is just moderately boiling.
Step 3
When broth is ready, remove the turkey and drain through the mesh into a big bowl. Squeeze the tomato through the mesh, if it is still in one chunk. All the boiled broth leftovers can be disposed. Then pour the broth back into the pot through a fine mesh to make the broth clearer.
Step 4
Get the broth to a boiling point and add potatoes. Once potatoes are boiling, add pasta. In the meantime, fry on the side in a pan onions and carrots. Once the onion is golden, transfer it to the soup. Add peeled turkey meat back into the soup and boil for a few more min on med heat.
Step 5
Once pasta and potatoes are done, add parsley and dill and let it sit with closed lid for 5 min.
Step 6
Serve as is or with a toast. Add ground black pepper to taste.
