Simple sweet corn soup
I changed this recipe to be vegan to accommodate my husband and no one has noticed I replaced the butter and cream!!

Instructions
Step 1
Melt margarine in a large soup pot over medium heat
Step 2
Add diced onion, season with salt and let cook until onions are very soft and translucent stirring occasionally, about 10 minutes.
Step 3
Raise heat to Medium High, add corn. Stir to combine & add water.
Step 4
Bring to a boil, reduce heat and let simmer for about 20 minutes.
Step 5
Remove from heat, add vegan cream.
Step 6
Puree until smooth.
Step 7
Serve hot or cold.
