Using up zucchini and squash from the garden during the summertime can be a challenge. Use this to use some frozen sausage or deer sausage to clear out the freezer as well. Easy!

Instructions
Step 1
Preheat oven to 400 and wash and prep all veggies
Step 2
Cook down sausage and sage leaves in cast iron with a little oil until fully browned
Step 3
Add garlic, green onions, zucchini, and squash to pan and continue to cook down
Step 4
Season with salt, pepper, and Trader Joe's mushroom umami seasoning
Step 5
While that cooks further, combine 1/4 cup goat cheese, 1/4 cup cheddar, 1 can cream of mushroom soup, 3/4 cup mayo, 1/2 cup chopped parsley, and two eggs to make the filling
Step 6
Once zucchini and squash are softened but not mushy, add pan mixture to a 13 x 9 casserole dish
Step 7
Add filling from Step 5 and stir to thoroughly combine
Step 8
Top mixture with 2 cups bread crumbs, 1 cup shredded cheddar, and 1/2 cup goat cheese
Step 9
Bake in oven at 400 for 20-30 minutes or until gooey and done as you desire
