Instructions
Step 1
Place half the potatoes in the bottom of a lightly greased slow cooker.
Step 2
Sprinkle with half the sausage, one cup cheese and all the sun-dried tomatoes and onion.
Step 3
Top with remaining potatoes and sausage.
Step 4
In a bowl, beat together eggs, milk, salt and pepper; pour over potato mixture.
Step 5
Cover and cook on low setting for 6 to 7 hours, until eggs are set.
Step 6
Top servings with salsa.
