Cherry Tomato Basil Gnocchi Pasta

Ingredients
4 servings
1 lbpasta
I prefer gnocchi because it’s a fun pasta to cook with
6 TbspUnsalted Butter
1white onion
or yellow
4garlic cloves
thinly sliced
1.5 lbsorange cherry tomatoes
any type of cherry tomato will do
1 BunchBasil
add as much basil as your hearts desire
Parmesan
Shredded, garnish finish pasta with Parmesan as well
salt
to taste
pepper
to taste

Chili Flakes

Instructions
Step 1
In a medium sized pot, melt butter over medium heat.
Step 2
Add the onion and the garlic with a liberal pinch of salt and pepper. I also like to add chili flakes for additional heat. Cook until softened, about 4-5 minutes, stir often.
Step 3
Now stir in cherry tomatoes and cook for about a minute. Then cover your pot, and simmer on low for 30 minutes, make sure all tomatoes have burst.
Step 4
While the tomatoes are simmering. Cook pasta to al dente and push aside.
Step 5
Transfer to a blender, add a cup of Parmesan cheese, then blend until puréed.
Step 6
Taste and adjust seasonings. Toss with your pasta.
Step 7
Add your protein to the pasta and garnish pasta with fresh basil and Parmesan. Enjoy!
