Instructions
Step 1
Cook rice in rice cooker. Set aside.
Step 2
Finely mince 1 teaspoon of garlic. Peel cucumber and half crosswise. Take out the seeds and cut into half moon slices. In medium bowl, combine chopped garlic, 2 tablespoons vinegar, 1 tablespoon sugar, and 1/2 teaspoon salt. Add cucumbers and marinate.
Step 3
In a small bowl combine mayo, sriracha, and 2 teaspoons water. Season to taste with salt and pepper. Pat steak very dry and thinly slice into strips. Season with salt and pepper.
Step 4
Heat 1 tablespoon of oil in medium sized skillet over high heat. Add steak strips and cook, without stirring, until we’ll browned on one side, about 3 minutes. Stir and continue cooking until beef is cooked through, about 2 minutes more. Stir hoisin sauce and 1/4 cup of water. Simmer until sauce is thickened, about 2-3 minutes. Season to taste with salt and pepper.
Step 5
Fluff rice. Place in bottom of bowl. Top with shredded lettuce. Serve with steak and pickled cucumbers. Garnish with green onions and cilantro. Drizzle with spicy mayo. Garnish with sesame seeds.
